EVOO is the highest quality olive oil available, extracted from the olive fruit without the use of high heat or chemicals. It’s the gold-standard of oils due to its low fatty acid profile, high biophenol content, natural extraction process, natural antioxidants and well-researched health benefits.
For olive oil to be classed as Extra Virgin it must have an FFA (free fatty acid) less than 0.8%. The lower the FFA, the higher the antioxidants, making it better for you.
